Roasted Cauliflower & Turnips
Sometimes I just don't feel like eating my vegetables. There, I said it. Generally speaking, I'm not opposed to vegetables and I love a good salad or roasted vegetables made on the BBQ in the summer. But I'm sure we all have days where we're just bored of what we've been eating and need to shake things up a bit. Last week I had one of those days.
So in order to cook up what was left in our fridge and satisfy my desire for something other than steamed veggies, I made roasted cauliflower and turnips. Super easy--and surprisingly delicious!
I know a lot of people don't like turnips (like my hubby) but they are definitely better roasted; it brings the sugars out of them and gives them a yummy caramelized taste. But, they're still turnips so don't expect a miracle!
Roasted Cauliflower and Turnips
- Heat oven to 400 degrees
- Cut up cauliflower and turnips and place in a bowl
- Toss vegetables with fat/oil of choice; add spices (I used a bit of sea salt, pepper and paprika)
- Place on a pan/baking sheet; the veggies should be in one layer and not too crowded for best results
- Cook for 35-45 mins, stirring once or twice, until vegetables are nicely browned
With just a little bit of time spent, you can create something delicious and different from your usual steamed vegetables! An added bonus: kids love it!
