Black Bean Brownies

Whether you're avoiding gluten or just want to make yourself a treat that isn't so bad for your waistline, give this recipe a try! I have only made this recipe once and was pretty impressed. I made a double batch and had to double the baking time but I think it couldn't cooked longer, as the brownies were still quite soft especially once out of the fridge for an extended amount of time. So the flavour of these brownies were great, but I may be posting updates as I tweak the amount of sugar and try to improve the texture... so stay tuned!

Here's how I made it:

  • 1 can (15.5oz) black beans
  • Chia seed binder to replace 3 eggs (or use 3 eggs)
  • 3 tablespoons unsweetened apple sauce (or use 3 tbsp of oil)
  • 1/4 cup cocoa powder
  • 1 pinch salt
  • 1 tsp vanilla extract (I always add more than this)
  • 3/4 cup sugar
  • 1 tsp instant coffee (optional)
  • 1/2 cup chocolate chips (optional)

 

  1. Preheat 0ven to 350 degrees F
  2. Lightly grease an 8x8 pan
  3. In a blender, mix all ingredients except chocolate chips.
  4. Once mixture is smooth, pour into pan; sprinkle chocolate chips over the top
  5. Bake until the top is dry and the edges pull away from the sides, about 30 mins
