Tinkerbell (or The Hulk) Smoothie

What do Tinkerbell and The Hulk have in common? The colour GREEN of course! I would love to take credit for the "green" smoothie idea, but I can't. I would also love to give credit to the person whose blog or post or comment I read that mentioned this idea, but I can't. My memory has failed me.

But instead of crediting just one smart mom, I am going to give the credit to ALL moms. Because I'm sure each and every one of us has had to be ingenious (and maybe a little deceitful...) in getting our kids to eat certain healthy foods.

So here's a healthy smoothie recipe that provides our kids with the wonderful healthfulness of spinach, camouflaged by the tastiness of fruit, and given a clever name to really attract them:

In a blender:

  • 1 package of thawed frozen spinach (or a couple handfuls of fresh spinach)
  • add enough water to blend until smooth (I used ~2 cups for a full blender of fresh spinach)
  • add 1/2 cup or more of yogurt (any flavour will do)
  • add 1.5 - 2 cups fruit of choice (right now my freezer is filled with blueberries & bananas)
  • blend until smooth!

This recipe is really just a guideline... feel free to experiment! All you really need to know is that spinach is healthy, the flavour is easy to disguise, but the green colour will always be there--so make sure you give it a clever name to make it fun!

The recipe made almost a full blender so I turned some of it into popsicles and my 20 month old daughter DEVOURED the rest for her snack. I thought I was going to have enough leftover for her snack tomorrow... I guess I also have to stock my freezer with spinach now!
