Beef & Broccoli Soup
Honestly, I wasn't quite sure about this one when I was deciding which recipes to make. When I hear "beef & broccoli" I immediately think of the oh-so-disgustingly-tasty Chinese food dish, so I thought I would be sorely let down by this soup. But, I knew that I loved cream of broccoli soup and I also knew that I needed to try some different recipes if my family was going to get through the first stage of the GAPS Intro Diet. Boy am I glad I tried it! It was a hit for the whole family! And soo simple to make, especially if you already have cooked beef on hand.
The recipe comes from the Healing Through GAPS blog that I found so helpful when I was still trying to figure out what we could actually eat at the beginning of the diet.
Beef & Broccoli Soup
Ingredients
- 3 qts (12 cups) beef stock
- 1 tbsp salt
- 2 cloves garlic, peeled and crushed
- 2 lbs broccoli tops
- 2 lbs beef roast, stewing beef or meat from stock bones
Preparation
- Combine stock, water, salt, garlic, and broccoli in a crockpot or stockpot
- Simmer 1 hr until broccoli is well cooked
- Blend until smooth (with immersion blender, food processor, etc.)
- Add bite sized pieces of beef and heat until cooked through
