Chicken Cilantro Soup

This was the first really enjoyable meal I had on our GAPS Intro Diet. There were other soups that I thought were good, but this one gave me hope that I really could make good food on the Intro Diet--good enough to even invite people over again! It was a confidence boost really. And the best part is that if you already have chicken broth and chicken made, it's sooo easy to throw together! The recipe came from the blog "Journey to Food that gives Life" which was one of the first helpful resources I found right before we started the diet. It was this mom's blog that showed me it really can be done with little kids, and that it might only take us a few weeks to get through the Intro Diet! As (almost) always, I adapted her recipe to suit my own personal tastes (and doubled the recipe)--you may soon realize that I very rarely follow a recipe exactly as written.

Chicken Cilantro Soup

Ingredients:

  • 8 cups chicken broth
  • 3-4 cups sliced or diced carrots
  • 6-8 sliced or diced mushrooms (optional, but gives the soup a great flavour)
  • 2 cups pre-cooked diced chicken
  • 1 bunch chopped cilantro
  • Salt & pepper to taste
  • Optional: homemade sour cream

Directions:

  1. Simmer carrots & mushrooms in broth until carrots are cooked
  2. Add chicken, cilantro, salt & pepper
  3. Heat & serve
  4. Garnish with sour cream
