Chocolate Chip Cookies {Grain-Free}

I have been playing around with different recipes for grain-free chocolate chip cookies and so far, this combination of ingredients is my favourite! Whether you are on a grain-free diet or not, you should add this recipe to your cookie repertoire. They are oh so satisfying!!
Chocolate Chip Cookies {Grain-Free}
Ingredients:
- 1 cup almond butter
- 1/3 cup honey
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tbsp coconut oil, melted
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips (use Enjoy Life for dairy-free recipe)
Directions:
- Preheat oven to 350°
- Mix all ingredients except coconut and chocolate chips. Make sure ingredients are well incorporated
- Stir in coconut and chocolate chips
- Bake for 8-9 mins until lightly browned
- Let cookies cool and enjoy!
Yields approx 15 cookies using a 2tbsp scoop
