Apple Cinnamon Chia Breakfast Pudding

Have you heard of chia breakfast pudding?? Breakfast and pudding... Sounds pretty awesome, right? There seem to be lots of recipes out there for it in the Paleo community. Which is both funny and disappointing, because I thought I had made this up myself haha But alas, while I was browsing Pinterest one day, I saw a recipe for Chia Breakfast Pudding and was like "YES PLEASE!" only to realize I was already making the same kind of thing.

My original recipe used yogurt but every other recipe I have seen uses coconut milk to avoid the dairy. So, really, it's up to you for preference!

Obviously using yogurt makes it a bit tangy (although my homemade yogurt is WAY less tangy than store bought), but adding chia to plain yogurt makes it super smooth, rich, and creamy. So you get that same yumminess as you would from coconut milk, except with probiotics.

Probiotics + tasty breakfast + easy thing to make ever = perfect.


So anyway, this is my new variation of my go-to breakfast pudding.


Apple Cinnamon Chia Breakfast Pudding

In a 250ml mason jar:


  1. Fill 2/3 full with plain homemade yogurt or full-fat coconut milk
  2. Add 2 tbsp of chia seeds
  3. Add 1 tsp of cinnamon
  4. Add enough applesauce to fill jar
  5. Stir together with a spoon
  6. Put on lid and refrigerate overnight
