Blueberry Chia Breakfast Pudding

Chia pudding is my go-to breakfast right now. It needs to be made the night before which means all I have to do in the morning is open the jar and grab a spoon. For a mom of three kids under 4 years old, mornings can be hectic! It's too easy to get caught up in everything that needs to be done and forget to feed myself, so having breakfast ready to eat is super helpful!

Blueberry Chia Breakfast Pudding

In a 250ml mason jar:

  1. Fill 2/3 full with plain homemade yogurt or full-fat coconut milk
  2. Add 2tbsp of chia seeds
  3. Add enough blueberries to fill jar
  4. Stir together with a spoon
  5. Put on lid and refrigerate

By morning, the yogurt will be thick and creamy and the blueberries add just enough sweetness to counteract the tartness of the plain yogurt. I enjoy this so much it's like having dessert for breakfast!
