Cinnamon Raisin Cookies
It's funny how our tastes can change... I remember being a young adult and thinking adults who drank black coffee were just crazy. Now several years later, drinking a cup of black coffee is one of the highlights of my day!
As a child, I loved raisins. But as I got older, I stopped liking them. I'm not sure if it was the taste or the texture, but if given a choice, I would much rather eat an oatmeal chocolate chip cookie than an oatmeal raisin cookie, hands down!
It's for that very reason that my favourite cookie recipe is for grain-free chocolate chip cookies. But since one of my daughters is allergic to chocolate (gasp!), and I know many people who DO enjoy raisins, I decided to make some cinnamon raisin cookies one day.
Again, it's funny how our tastes can change!
Maybe it's because the GAPS diet has changed my taste buds (it truly has) or maybe it's because I make darn good cookies... but no matter the reason, I actually LOVE my cinnamon raisin cookies!
So whether you already love raisins or you're a hardcore chocoholic like me, you definitely need to give this recipe a try!
Paleo Cinnamon Raisin Cookies
- 1 tbsp coconut oil, melted
- 1 cup almond butter
- 1/3 cup honey
- 1 egg
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/2 cup shredded coconut
- 1 cup raisins
- Preheat oven to 350°
- Mix all ingredients except coconut and raisins, making sure ingredients are well incorporated
- Stir in coconut and raisins
- Bake for 8-9 mins until lightly browned
- Let cookies cool and enjoy!
Yields approx 15 cookies using a 2tbsp scoop. Store in an airtight container.
I know there are some haters out there who think that if you're on the paleo diet you should eat strictly meat and vegetables. That's fine—more power to you! But I think it's perfectly healthy to indulge occasionally on treats that are made with good, wholesome ingredients!
