Pumpkin Spice Waffles {Grain-Free}

If you follow me on Instagram, then you know that I have also jumped onto the pumpkin spice bandwagon this season. But instead of heading to a coffee shop for a Pumpkin Spice Latte or baking up a sugar-laden pumpkin pie, I've found great ways to enjoy my favourite fall flavour without compromising my health! One of the recipes I've made a handful of times this month already is the Pumpkin Spice Waffles I am sharing with you today. These are so easy to make, kid-friendly, and suitable for GAPS and paleo.

This recipe is adapted from Savory Lotus' "Grain Free Banana Waffles." Katja's waffle recipe is perfect and has been made in our house at least a dozen times now. So when I decided I wanted to autumnify (I just made that up. Use it.) my waffles, all I did was add some pureed pumpkin and some spices and voila! The funny thing is that I kept thinking it can't be this easy, can it? So I tweaked it. No good. I tweaked it again. Still no good.

I went back to my original recipe and they were perfect. I try not to assume that I have perfected things on the first try, but in this case, I kind of did. Although most of the credit goes to Katja :)

Pumpkin Spice Waffles

Ingredients

  • 4 eggs, room temperature
  • 2 tbsp of coconut oil or ghee, melted
  • 1/2 cup of full-fat coconut milk
  • 1 tsp vanilla
  • 1 ripe banana, mashed
  • 1/2 cup of pumpkin, pureed
  • 6 tbsp of coconut flour
  • 1/2 tsp of sea salt
  • 1/2 tsp of baking soda
  • 2.5 tsp of pre-mixed pumpkin pie spice OR I use 1 tsp of cinnamon, 1/2 tsp of nutmeg, 1/4 tsp each of ginger, all spice and ground cloves

Directions

  1. Heat your waffle maker.
  2. Beat eggs in a large bowl.
  3. Add remaining wet ingredients and blend well.
  4. Mix dry ingredients in a small bowl.
  5. Add dry ingredients to wet ingredients and blend until it's a thick, smooth batter.
  6. Lightly brush oil on the waffle maker and cook according to your waffle maker's instructions.

I use an old Sunbeam waffle maker that makes 1 waffle at a time using 1/2 cup of batter. This recipe makes 5 waffles for me.
